A medium-intensity goat cheese from Quebec, fashioned after traditional Loire Valley chevres. Named for cheesemaker Caroline's great grandfather.
The rind is wrinkly and bloomy, covering a smooth and dense paste that will shift from chalky when young to creamy when mature. Expect mild "goaty" flavours and aromas with a subtle nutty, slightly spiced taste.
