Arbois Vin Jaune '16

Vin Jaune is unlike anything else in the wine world — and Domaine du Pelican's Arbois is one of the finest expressions of it you can find. Made from Savagnin grown on the blue and grey marl soils of Arbois, this is a wine of extraordinary complexity, longevity, and character that rewards those willing to meet it on its own terms.

After harvest, the wine is aged for a minimum of six years and three months in old oak ouillage-free casks — meaning the barrels are deliberately left unfilled. Over time, a protective layer of yeast called the voile (veil) forms on the surface, shielding the wine from oxidation while simultaneously transforming it. The result is something that tastes like nothing else: nutty, saline, oxidative, and endlessly complex, with a finish that can last for minutes.

Domaine du Pelican, led by Guillaume d'Angerville, farms biodynamically and organically, bringing the same rigour and precision to the Jura that d'Angerville is celebrated for in Volnay.
