This unique, aromatic white wine from the Jura region of France is aged in old oak casks. The casks are not topped up and over time a layer of yeast called the Voille (Veil) forms on top, similar to the Flor in sherry. This produces an oxidative style of wine that is the perfect pairing the a lovely chunk of aged Comte.
