Adoray

Adoray is named for Adorice and Raymond, the father and grandfather of cheesemaker Alain Boyer. A perfect cheese, this cheese has an orangey/pink rind and is wrapped with smoked spruce bark. The inside is the texture of custard and has an ivory coloured sheen. On the palate there is a whiff of smoky bacon, wet hay and subtle funk. It's a perfect cheese. Pasteurized cow's milk.
