Bombolla NV

Adernats is a cooperative winery in the Tarragona region of Catalonia with a long history of making honest, characterful wines from the indigenous grapes of the region. Bombolla — meaning “bubble” in Catalan — is their entry-point Cava: a classic blend of Macabeu, Xarello, and Parellada, made in the traditional method with secondary fermentation in the bottle.

Crisp, refreshing, and genuinely delicious at a price that makes it the easiest "yes" on the shelf. Pale gold with fine, persistent bubbles; green apple, citrus, and a hint of brioche on the nose; clean and dry on the palate with a lively acidity that makes it endlessly food-friendly. The kind of sparkling wine you open on a Tuesday because you don’t need a reason. Excellent with cheese, charcuterie, fried food, or absolutely nothing at all.
