Bathed in a cognac fortified aperitif and fleur de sel water, creating an creamy, soft cheese with a slight crunch to the rind. Expect meaty, buttery briny and tangy notes up front, finishing with a tangy, nutty, fruity and smoke notes.
Pair with a pinot noir and fresh fruit.
