This traditional French Basque cheese is made using whole pasture-raised sheep's milk in the Pyrenees mountains. The natural rind and rich veining is formed over a three month aging period, which allows the yielding paste to strike a lovely flavour balance. Expect notes that dance between a typical "blue" bitterness and the mineral-forward, lanolin notes of sheep milk with an earthy finish. Bleu des Basques is incredibly versatile - crumble on salads or in gratins, or even enjoy as a part of dessert with pastries or figs and honey.
