1924 Bleu is a premium, French blue cheese made from a blend of cow and sheep's milk, created by Mons Fromager to honour the mixed-milk style of Roquefort before its strict Appellation d'Origine Contrôlée (AOC) regulations in 1925. The cheese has a rich, buttery, and dense paste with a natural rind and prominent blue veins, offering a complex flavour profile with initial milky notes that develop into strong, salty, and bitter undertones. Depending on the ripeness, expect notes ranging anywhere from condensed milk and cracked pepper to cultured butter and crispy bacon.
