This "silver pearl" of a cheese hails from the Veneto region of Northern Italy. Pasteurized cow's milk is infused with black truffle, rubbed with olive oil, then cured for a month under a crust of beech wood ash and a blend of warming spices for a uniquely delicious bite.
Enjoy on its own or blended into your favourite recipe. Pairs neatly with a glass of prosecco, sweet dessert wine, or a lighter red such as Pinot Nero.
Pasteurized cow's milk, truffle (min. 0.3%), salt, rennet, lactic enzymes. On the rind: cinnamon, cloves, ginger, nutmeg, cardamom, cilantro, ash (inedible).
