A slightly soft and springy washed-rind cheese from Piedmont, Italy. Despite being cellar-aged, it is sweeter and delicate tasting, with notes of cooked butter, fermented milk, and mountain pastures.
Use as a table cheese, an excellent addition to a charcuterie board, or as an alternative to raclette. Made for stirring into Polenta, or Risotto dishes.
Pasteurized cow's milk, salt, rennet, lactic ferments. On the rind: E150a (caramel), lysosome from EGG (inedible).
