Third-generation Belgian farmstead cheesemaker Johan Deweer has perfected modern takes on traditional trappist cheese. Drunk Monk is a fudgy, pliable delight that has been washed with Rex beer as it ages for around 6 weeks - perfect for fondue, or a funky macaroni and cheese.
Serve on top of warm bread, roasted veg, or sausage and potatoes. Pairs perfectly with a Belgian blonde ale, Geuze, or oaked Chardonnay.
