David, the legendary Kiwi winemaker behind Theriantropy is making some of our favourite wines in Ontario. He sources fruit from throughout the province, PEC, Niagara, even fidning great fruit up near his beautiful home outside Creemore, Ontario.
This Sous Voile Chardonnay is really fun, made with Prince Edward County fruit, the vessel developed flor... similar to the Jura or Sherry, giving it a loving kiss of oxidized nuttyness. A really special wine with bruised apple, apple pie, lemon curd, almonds and sea breeze notes. Wild fermented. Low Intervention. Bring me 200g of Reblochon.
