Clementino Ramirez Washed Honduras

Cape Coffee is a small batch roastary located on the southern shore of the Avalon Peninsula in Cape Broyle, Newfoundland. They roast carefully and delicately to highlight the complexity and nuanced flavour profile of where that specific coffee was grown and cared for at origin. They tend to lean towards lighter roasts to bring out the most clarity, allowing the coffee to express itself in an articulate way.

This is our first lot from Clementino Ramirez, a producer with decades of coffee growing experience who has endured many periods of volatility and struggle. Clementino is the father of Disnel Ramirez who was one of the first producers we purchased coffee from in Honduras. We aspire to have a comprehensive approach of purchasing coffee from the Ramirez family, supporting their access to a specialty market. This washed anaerobic Bourbon variety is juicy, has a balanced acidity with notes of toaster strudel, berries and chocolate covered jujubes.
