Pardas Cosecha is doing something exciting in Penedès — taking Xarel·lo, the indigenous Catalan grape best known as a backbone of Cava, and letting it run free with extended skin contact. The result is Polar Boar: a wine that is fruity, textured, and light-bodied in the best possible way, with all the character that comes from a grape grown in its home territory and made with minimal intervention.

This is orange wine without the intimidation factor — approachable and fun, with enough complexity to keep things interesting glass after glass.
