Tubbetti Rigati

Tubbetti Rigati are short, ridged tubes — a miniature cousin of rigatoni with a Neapolitan soul. The name means "little tubes with ridges," and those ridges do exactly what they promise: grip sauce, trap flavour, and make every bite count.

Gigi's version is bronze-extruded and slow-dried at low temperature, producing a rough, porous surface that mass-produced pasta simply can't match. Made from durum wheat semolina and water, nothing more. Their compact size makes them ideal for thick, hearty preparations where a larger tube would overwhelm.

A classic in Neapolitan minestrone and pasta e fagioli, but equally at home tossed with a rich sausage and tomato sauce or a simple butter and Parmigiano. Versatile, satisfying, and deeply Italian.
