Casarecce

The name says it all — casarecce means "homemade" in Italian, and this Sicilian pasta shape carries that spirit in every twisted fold. Each piece is rolled into a narrow scroll with a groove running its length, creating a surface that catches and holds sauce in every crevice.

Gigi's Casarecce is made from durum wheat semolina and water, nothing more. The result is a pasta with real bite and a clean, wheaty flavour that lets the sauce do the talking. It shines with seafood — clams, shrimp, or a simple bottarga butter — and is equally at home with a light zucchini and ricotta or a bright cherry tomato sauce.
