A classic French blue cheese from the pastures of Auvergne. Fourme d'Ambert is one of France's oldest cheeses, dating all the way back to Roman times. The AOP specifications dictate that the cattle must graze for a minimum of 150 days, and in the winter be fed on non-GMO feed produced in the region.
It is a dense, supple blue that pairs nicely with Sauternes or other desert wines as well as full body reds.
Ingredients: Raw Cow's milk, Salt, Animal Rennet, Lactic starters, Penicillium roqueforti.
