Lluvia — Spanish for "rain" — arrives in the glass like a summer storm over the high plateaus of Valencia: unexpected, refreshing, and impossible to ignore. Made by Bodegas Sentencia from organically grown Bobal, one of Spain's most ancient and underappreciated indigenous grapes, this is a pétillant naturel of rare character.
The ancestral method means the wine finishes its fermentation in bottle, capturing natural bubbles without disgorgement or added sulphites. The result is a hazy, salmon-pink pét-nat with a gentle, persistent fizz and a nose of wild strawberry, pomegranate, and dried rose petal. On the palate it's bright and saline, with a tangy, almost cider-like energy and a dry, mineral finish that lingers.
Serve well chilled (6–8°C). A natural at the table with charcuterie, fresh cheeses, grilled vegetables, or simply on its own as an aperitivo.
