This wine is sourced mostly from the loam- and clay-rich, sandy soils of the Herreberg vineyard. It’s made from 7–8 separate harvest passes. Most of the fruit is whole-cluster pressed, while the final few passes are foot-trodden and left to soak without temperature control. Around 60% of the total volume was fermented and aged in 500L Hungarian oak barrels. The remaining liters were fermented in ceramic amphorae. These two batches were blended with their lees and a small dose of sulfur before being bottled unfiltered. Jónás lives somewhere between a skin-contact and a white wine.
