A true Farmhouse cheese, made with love on the same property that the cows graze on!
Farmer and cheesemaker Nigel Smith has been making cheese on his family farm in Elgin, Ontario since 2011, which was certified organic in 2006.
Pilgrimage is a traditional gouda-style cheese that has been aged for at least 60 days, and is only produced from spring to midsummer, taking advantage of the milk produced as the cattle graze on lush pasture. Four milkings from Nigel's herd of Brown Swiss and Holstein cattle are combined to create small batches through the week.
Expect warm lactic and nutty undertones with a slightly spicy, lingering finish, and a few crunchy crystals!
Ingredients: Raw Organic Cow's Milk, organic rennet, bacterial cultures, salt.
