This multi-award winning cheese from Fromagerie du Presbytère in Québec follows traditional techniques from Jura, France to create a lusciously complex cheese. Unpasteurized cow's milk is curdled, cooked, and pressed before being aged for 24 months on wooden planks in what was formerly the church of Sainte-Elizabeth-de-Warwick. Expect a medium-intensity salt bite, balanced with a creamy nuttiness and a touch of stone fruit.
An outstanding addition to any charcuterie board, or take advantage of it's excellent melting properties to elevate a fondue or grilled cheese.
