Comté is the most beloved cheese in France — and for good reason. Always made with raw cow's milk from the Jura mountains, it's a cheese that rewards patience. While Comté can be aged anywhere from six months to several years, we've found that 24 months is the sweet spot: the moment where flavour complexity peaks while the texture remains beautifully creamy and velvety.
The result is a cheese that's deeply satisfying on its own, and absolutely spectacular melted.
