Produced using a technique handed down to Tonio, the mustache, Cinzia's father, who by producing some wine for him also made a sparkling wine. The ancestral method, a technique very similar to PET NAT, is the oldest system of making a sparkling wine in a natural bottle, there is a bottling of the wine at the crescent moon, with the addition of dried grape juice or natural residual sugar from the first fermentation that give the refermentation in the bottle. the result is a more persistent and lasting natural sparklingness, since it is not filtered it keeps the bubbles longer.
