The process is as precise as it sounds: the coffee cherries undergo two stages of oxygen-free fermentation before being subjected to thermal shock — rapid temperature change — to arrest fermentation at exactly the right moment and lock in a specific and highly controlled flavour profile. The result is a coffee of almost startling intensity and clarity: vibrant tropical fruit, complex fermented sweetness, a juicy, bright acidity, and a long, layered finish that keeps evolving in the cup.
