A richer example from Big Head's SELECT series of wine. Botrytis, the infamous Noble Rot, has been employed concentrate the palate and alter the complexity in the nose of this beautiful wine.
A cleaner nose compared to prior vintages. There is less obvious botrytis aromas, but more ripe fruit. The honey and character is cleaner versus being slightly earthy. Ripe apple, pear and honey with a touch of clean linen aromas. The palate is dry with lots of citrus and beeswax textures in the mouthfeel due to carbonic fermentation. This is a Chenin Blanc that will develop wonderfully for years.
